Sweet Potato Brownies

Memorial Day is near!! Don't forget about these clean, sweet treats to make for your Memorial Day celebration. Enjoy them with no guilt. 

 
 Ingredients:

 1 cup Whole Wheat Flour (or use Gluten Free Flour)
1 cup Unsweetened Cocoa Powder
1 Tbsp Ground Cinnamon
1 Tbsp Baking Powder
1/4 tsp Sea Salt
1 cup Baked Sweet Potato
1/2 cup Agave Nectar
1/4 cup Olive Oil
1 tsp Pure Vanilla Extract
6 Egg Whites
 
Extra Olive Oil

 Method:

 Make sure you preheat the over at 350 degrees F.
Combine the dry ingredients, flour, cocoa powder, baking powder, cinnamon and salt in a medium bowl. Set it aside.
In a bowl or food processor, combine the baked sweet potato, agave, vanilla extract and oil. Combine until it is smooth.
Mix the dry and wet ingredients together until well combined.
Get your egg whites and beat till it is fully. Then gently fold it in the mixture.
Pour it in your prepared baking pan which was prepared using olive oil so the brownies won't stick to the pan. 
Bake for 18 minutes, you can test it out by inserting a toothpick and if it comes out clean your brownie is ready!
 
Cool and serve. Yum!
