Clean Eating Snickers Bars

Ingredients
 
Bottom Layer:
 
3/4 cup smooth peanut butter, unsalted
2 tbsp coconut oil, melted
1/2 tsp pure vanilla extract
1/4 tsp salt
1 1/2 cups rolled oats (use gluten free for GF version)
 
Top Layer:
 
10 - 12 Medjool dates, pitted
1/4 cup peanuts, plain
1 cup chocolate chips
1 tbsp coconut oil
2 tbsp peanuts, finely chopped
Sea salt, to taste
 
Directions
 
1. Prepare your pan and line with parchment paper.
2. In a bowl, add in peanut butter, coconut oil, vanilla extract and salt then stir to properly combine. Add in the oats and mix well. Might be easier to use your hands then transfer to the prepared pan for the bottom layer. Flatten it.
3. Add in the dates on top side by side in a single layer. Then add in the peanuts on top as next layer. 
4. Melt the chocolate chips with coconut oil in the microwave or double boiler, whichever is easier for you. Pour it over the layers till fully covered. Add in the nuts on top. Let it rest and freeze for an hour then serve!
