Chocolate Covered Raspberry Cookie Bites (No - Bake)

1-1/2 cups unsweetened shredded coconut with extras for toppings or you may use nuts!
1/4 cup coconut oil
2/3 cup fresh or frozen raspberries, divided or other berry of choice
1/4 cup raw honey or agave nectar if you're going plant based
1/2 teaspoon vanilla extract
1/4 teaspoon sea salt
1/2 cup dark chocolate chips
Method:
In a blender or food processor, add in coconut, coconut oil, 1/3 cup raspberries (or berries of choice), agave nectar, vanilla and the salt. Process till you have a dough formed.
Get the remaining raspberries, chop it to smaller pieces and fold it into the dough.
Then get scoops of the dough and form into 1 inch balls and place in lined parchment cookie sheets and place in freezer for 15 minutes to harden.
While freezing the dough, place the chocolate chips in a bowl and microwave it to melt. Place for a minute, remove to mix, then back to the microwave again for another minute then remove to mix again till it is evenly smooth (don't burn it!!)
Check your dough balls and check if it is hard, dip them to the melted chocolate. You may cover the whole of the dough or only the top and sprinkle toppings on top! You may reinforce the kids when doing this, it will be a fun activity with them. After dipping all doughs, freeze them again for a few minutes till chocolate is hard. Serve and enjoy!
